Pizza Dough Calculator

Scale a dough recipe by the number of pizzas and the ball weight — every ingredient, the water temperature and a matching fermentation schedule, including a poolish or biga.

Batch

Target dough: 1020 g including residue

Tipo 00 (W 260–300) · High heat 430–480 °C, 60–90 seconds

Ingredients

IngredientWeight% flour
Flour616.7 g100%
Water382.3 g62%
Salt17.3 g2.8%
Instant yeast3.7 g0.6%

Total dough: 1020 g4 × 255 g per ball.

Fermentation

  1. 1.Mix and knead the dough until smooth and elastic
  2. 2.Bulk 2 h at 20–22 °C with a fold after 45 min
  3. 3.Ball up and proof 3–4 h at room temperature, covered
  4. 4.Bake when the balls are relaxed and hold a fingerprint

8–12 h bulk at 20–22 °C, then 4–6 h in balls

Water temperature

Use water at 42.0 °C for 24 °C finished dough. Method: (desired × 4) − (flour + room + friction).

Above 40 °C the yeast suffers — cool the flour or the room first.

About this tool

Scales a pizza dough recipe by the number of pizzas and the dough-ball weight for six styles, each with its typical hydration, salt, oil and sugar ratios and its own fermentation profile. It returns every ingredient weight, the finished dough weight, the water temperature needed for your target dough temperature (with the friction factor for hand, stand-mixer or spiral mixing) and a schedule for same-day, 24/48/72-hour cold ferments or a poolish/biga — deducting the pre-ferment's flour and water from the main dough. Everything is computed locally in your browser.
